Good morning! How is your weekend going? Mine is much busier than expected which is why I am glad I stopped into Whole Foods and Shop Rite on Friday.
I was running low on oatmeal, the Stonyfield Organic Greek Yogurt was on sale and check it out –> blueberries!
I wanted to drop in this morning before I run to share that easy recipe I never got to on Friday.
A few weeks ago my son asked for Bagel Bites.
I totally used to buy these little bites of pizza but over the years stopped because he forgot about them and I started learning more about long lists of ingredients.
In the moment he asked for them again I instantly had an idea.
Three ingredients, easy to assemble, five minutes to bake and most importantly, really really good.
The secret to these little bites are the Whole White Mini Pita Breads I use as the crust. I am sure you can find something like them at any grocery store but I get them in the bread section at Trader Joe’s.
Just topped each pita with some tomato sauce….
And then a sprinkle of mozzarella cheese…
Baked in a 400 degree oven for literally five minutes (maybe a few minutes longer I guess depending upon your oven)…
When I tell you how happy these pizza bites make my son, he literally requests them every day. They have become our quick go-to lunch, snack, mini-meal in between afterschool activities and even dinner.
I try to pair it with a salad for him which he will sometimes eat but even without it, I think a plate of pizza bites is a great meal.
One time we even tried stuffing the sauce and cheese inside of the pita breads just like Amy’s Pizza Snacks.
Ever buy these? I always had a box of these in my freezer when my son was little. Not so much anymore, especially since we can make them at home.
Not pretty but pretty tasty!
Pizza Bites:
- Whole Wheat Mini Pita Breads (as many as you wish to make)
- Tomato Sauce of choice
- Shredded Mozzarella Cheese (I use Trader Joe’s Light Shredded)
Preheat oven to 400 degrees. Top each pita bread with tomato sauce followed by a sprinkle of mozzarella cheese. Place on lightly greased pan or aluminum foil and bake for five minutes. Just pay attention so that the cheese doesn’t burn!
A while back I shared my recipe for Sweet Potato Bites which is very similar to this recipe only it uses sweet potato wedges in place of the pita bread.
I haven’t made them in a while but I think I need to get to these this week!
