Easy Recipes To Make Right Now While Stuck At Home

Now is a really good time to share some of my easy-to-make recipes from past years on the blog.

Obviously, we know that I don’t create new recipes these days (unless you want to learn how I make a pizza bagel) but I feel that I did put in my time in the kitchen during the early years of my blog. While never a true recipe blogger (zero interest in the photography aspect), I do know what I’m doing in the kitchen when it comes to easy vegetarian recipes, baking, and goodies.

So maybe you are a new reader who never knew I had recipes up my sleeve. Or maybe you are a longtime reader who totally forgot about some of the recipes I’ve shared in the past. Perhaps you are looking for something different to cook or a new angle for what you already make regularly. Maybe you have some pantry staples and didn’t think to combine them in the way I’m listing below. Or even better, maybe you are looking to try more vegetarian recipes and didn’t know how easy it was to do.

Let’s start with a treat. My Cold S’mores. 

I call the recipe mine although I owe it to my son’s cooking class from when he was barely three years old.  Gosh, I miss taking him to those little classes at that age! We had so much fun. Anyway, the summer before my son turned three, we would go weekly to a cooking class for his age group. The first recipe we made was, in fact, Cold S’mores! Easy for kids to make, only requires four ingredients, and there’s no need for an oven. PERFECT.

This has to be the most perfect easy dessert recipe for right now. You likely have the ingredients in the house and you can make so many Cold S’mores from one recipe which you can freeze in bulk.

  • Cool Whip
  • Mini Marshmallows
  • Graham Crackers

I’m all about food in bulk right now because I hate the fact that I can’t go food shopping whenever I want. This whole experience is leaving me feeling as though I need to stock up and fill my fridge, freezer, and pantry like never before.

How To Roast Frozen Vegetables

As a vegetarian, I live on vegetables. Right now, it’s an issue to live on fresh vegetables because it does require me to order from the grocery store or dash on through a store once a week like an episode of supermarket sweep to grab what I need while praying I don’t catch the virus.

I do love frozen vegetables though. In fact, I find frozen vegetables much easier to digest than fresh vegetables most of the time. Years ago I came up with the idea to roast frozen vegetables. I had no idea it was a thing so I wrote about it, and well, How To Roast Frozen Vegetables  has become my most popular searched post to date. If you are stocked with frozen vegetables right now, you can definitely roast them!

Plant-Based Stir Fry

Talk about the easiest meal to make from the pantry and freezer! I created this plant-based stir fry recipe (if we can even call it a recipe?) using a bag of steam fresh vegetables, chickpeas, and brown rice. You can cook the brown rice you have in your pantry OR go with Trader Joe’s brown rice packs from their frozen section. The EASIEST and QUICKEST healthy meal there is, and it’s quite tasty too.

I’ve written about power bowls so many times over the last seven years. I’ve even revamped my How To Make A Power Bowl post in recent years but the original infographic below is really useful as it lists ingredients ideas which are great ingredients for stocking up, with many able to store in the pantry (and freezer!).

How about some pancakes? I created this recipe for Peanut Butter Chocolate Chip Pancakes and immediately shared it because my son loved the pancakes, and he is not always so easy to please when it comes to my cooking.

I rounded up some of my favorite recipes that I’ve shared on the blog in this post for 6 healthy recipes using oatmeal. I live on oatmeal even though I don’t speak about it as often anymore. Easy To Make Vegetarian Recipes (and cookies too!)

 

I decided to give my recipe section of the blog some attention by highlighting a few easy to make vegetarian recipes that I haven’t talked about in a long time! At least I do not think that I have?

I hope that one of these recipes inspires you to try a new salad combination or to cook something different. Oh, and I added two cookie recipes too…just because. 🙂

Round up of easy to make vegetarian recipes worth trying this week!

Let’s start with this Super Salad Recipe. 

The picture doesn’t look like much but trust me, the shaved Brussel sprouts, feta cheese, and dried cranberries combine to create a delicious meal.

Sometimes the most basic of salad ingredients need to be called out so we all realize how easy it is to make a great tasting salad at home.

I am definitely going to buy feta cheese this week and brussels sprouts so that I can make it again.

Once you have the feta cheese in the house, you can make this Power Salad too!

Another great salad recipe which is super simple to throw together. Of course you can always customize the vegetables (and even the plant-based proteins) but this is an awesome salad to use as a reference if you need a little assistance on your selections.

I like this power salad for making in advance too so that then you have it for lunches (and even dinners) for the week. If you eat meat, you can also add grilled chicken or steak to this salad and I’m sure it would be a winner.

Eggplant Cacciatore!

Oh this eggplant cacciatore was SO GOOD. Eggplant cacciatore is delicious and really easy to make. The most important thing is to remember to actually buy an eggplant and not forget it like I always do when I get to the grocery store.

I don’t find eggplants to stay fresh for long (even in the refrigerator, usually just a few days) so keep that in mind when you get one in terms of how soon you plan to make this recipe.

Sweet Potato, Black Bean, & Quinoa Burgers

These burgers were the best and so good for freezing! They held together really well and reheated without issue. I miss having them on hand in the freezer so I really need to make them again.

Coconut Flour Chocolate Chip Cookies

I LOVED this cookie recipe the first time I experimented with it. The use of coconut flour in place of regular flour made these cookies a bit crumbly but they certainly don’t fall apart. The texture and taste was on point. I definitely need to make them again.

Oatmeal Raisin Chocolate Chip Protein Cookies

Yum. One of the best healthier cookie recipes I have ever come up with in my cookie baking history. I always use Skoop Protein Powder but I’m sure another vanilla protein power that you favor would work well too.

6 Healthy Recipes Using Oatmeal To Try Today

 

It’s all about round-up posts this week!

I really like to review old posts in order to see what I’ve written over the last 4 years. Actually it’s more like 4 and a half years now!

Although I really don’t create and share recipes anymore, it’s still important for me to bring my favorite recipes to life for those of you who missed them the first time around!

I decided to put together this round-up of 6 healthy recipes using oatmeal which contains recipes I have shared over the years here on the blog.

We aren’t just talking bowls of oatmeal today either! We are talking cookies and bites too which will provide you with recipes for excellent nutrition any time of the day.

Oatmeal is such a versatile ingredient. It can really be considered a blank canvas, used to create a nutritional powerhouse of a meal or snack. Adding fruits, chia seeds, nuts and/or nut butter and a protein source such as eggs, greek yogurt or protein powder combines to create the perfect post-run or anytime meal.

The combination of complex carbohydrates, protein and healthy fats not only taste great but also assists in repairing your muscles and replenishing your glycogen stores!

Keep in mind that although it is summer, you can enjoy your morning bowl of oatmeal served cold and I don’t even mean making overnight oats either! I always cook a few plain servings of oatmeal in advance for the week and store them in the refrigerator. In the winter I heat the cooked oatmeal but in the summer, I often eat my cooked oatmeal cold. I just mix in fruit and peanut butter (or whatever else) and enjoy it served cold. It’s so good this way, especially after a hot run!

Blueberry Pie Protein Oatmeal – I make this oatmeal quite often! It’s super simple and really tasty too. You can use fresh or frozen blueberries in this easy recipe. I love this oatmeal served hot or cold!

Unbaked Baked Oatmeal – I love this oatmeal recipe since it involves mandarin oranges which aren’t always available all year. Once you see them in stores, get them to use in this oatmeal!

Autumn Oatmeal – This oatmeal is not just for the fall season! Apples are available all year long so make this easy recipe whenever you feel like warm cinnamon apples in your bowl. It’s really delicious.

I still remember how shocked I was when I created this healthy cookie recipe so perfectly on the first try.

Gapfit Finds & Links I Am Loving

 

Oh, hi. Happy Friday! It’s been quite a nonstop week so I am happy to see the weekend is here.

I have a few new Gapfit finds to report today! I’ve been in need of new running capris but my requirements were pretty specific. First, I didn’t want to spend a lot of money. I tend to spend more money on regular clothes, especially lately, so spending on my running apparel is really at the bottom of my list.

Second, I wanted running capris that didn’t feel like they were there. Lately my waistbands from lululemon are bothering me. I do not want to feel them! I want as little material as possible at my waist!

So, I bought two pairs of Gapfit GFast Capris.  The price is perfect and the fit is darn good too. I was nervous they would slide down while running but they haven’t so far and the waist doesn’t bother me either! There’s one inside pocket but no zippered pocket which I guess I can deal with. I like zippered pockets!

I also bought this Gap Breathe Strappy Shelf Tank and really like it, not just for the pretty, strappy back. It gives a barely there feeling which I am appreciating on top too. I really hate to feel my clothes lately!

Oh! And getting back to a Gap Soft Spun T-Shirt dress that I shared a few months ago – I wore it yesterday for a work lunch meeting and totally love it! It’s so comfortable and really cute.

On Wednesday I mentioned that I took a little break from blog work in order to do other things. Of course other things included shopping.

I am in love with the Align Crops from lululemon. There aren’t enough words to describe how well they fit and how soft they are. The Align Crops are designed for yoga, not for running but I consider them casual wear for when you want a great pair of leggings that look good and make you feel awesome. Yes, I do think they are worth the investment.

If you are looking for the perfect t-shirt this summer season, I recommend the new vintage cotton t-shirts from J Crew. They fit me really well and have a nice shape. They aren’t long t-shirts but have a good cut and the perfect sized cap sleeve that isn’t too capped but isn’t long. The sleeve of a t-shirt needs to hit your arm in the right spot in order to be flattering. Try it on and then get ALL THE COLORS.

Can we talk slides for a minute? Gosh how I wish my slides and sandals from 1999 had lasted me since the styles have returned! Everyday sandals though don’t last very well season to season since we wear them into the ground with our bare feet so I try to let the old pairs go after a while in favor of new ones.

Anyway.

If you have seen the cute FENTY Puma by Rihanna slides with the pink bow, you can actually spend a little less and go with the TOP SHOP Halo Bow Slide. They are the same thing! The only difference, I think, is that the Top Shop pair is not as pink. From what I have read about them in comparison, they are basically the same and you can save some money.

Now, can someone please find me the cheaper version of these CHANEL slides? There was a time in my life (hello, early 20’s) that I would totally rationalize this purchase but right now, I just can’t bring myself to do it. Where is Kate Spade when I need her?! Surely she can replicate these CHANEL slides for a more acceptable and rational price for a sandal.

I can’t remember the last time I missed a Thinking Out Loud post but it happened yesterday.

It wasn’t totally intended. I’ve been having small issues with my site every afternoon which combined with trying to keep up with my massive writing workload for work kept me from posting. I reach a point in the day where my brain stops thinking and this time, it stopped thinking before a post could be written.

But it’s Friday! And I have my eye on a few things such as this off the shoulder knit dress from Abercrombie. And these adorable Idalah Bow Espadrille sandals from Kate Spade. My mind wasn’t even on sandals until Heather started sending me links to the sandals she was interested in and now I need new sandals too.

I am also starting to look for new bathing suits and cover ups for summer. This is a search I typically do in person and one I can’t really rely on Forever 21 to save me money. I tend to spend more on swimwear for quality and fit reasons. A good bathing suit can last for years so I think it’s worth the investment. I did spot this cover up dress at Forever 21 which is cute. And I saw this cover up  at Bloomingdale’s. It’s Bloomingdale’s Friends and Family time right now!

Truth: For the longest time, I could type the letters B-L-O into my web browser and immediately bring up my Bloglovin page. Nowadays, if I type B-L-O into the browser, I get Bloomingdale’s. That’s my sign that I’ve been shopping a whole lot lately!

New Dior Lip Glow

I have pushed the Dior Lip Glow on you several times in the past but now I got the newest shade (berry!) and just insist you pick it up too.

Dior Lip Glow is a lip balm with hydration and vitamin E with a pretty hint of color which reacts differently to everyone’s pigment. I always love the way the lip glow looks on me as it creates a nice color without being overpowering. I’ve had a pink and peach and now the berry Dior Lip Glow color to add to my collection.

Henri Bendel Beauty Essentials Trio:

Okay so I know I mentioned these Henri Bendel Essential Trio travel bags a couple of months ago but I must mention them again because I am in love! I used all three bags when I went to Chicago and they were just perfect for organizing all of my stuff. I used one bag for makeup, one for toiletries and one for odds and ends.

I felt so organized and I really feel these bags take up less space than your usual toiletry/makeup cases.

Even if you aren’t traveling, I think these bags are a necessity. Think about your beach bag needs (like where to put the sunblock, lip balm hair brush, tampons etc.), your makeup case for your purse and even storing one in your work tote. The bags come in other patterns and materials, I would check out Bendel’s whole collection actually if you are interested.

On my list from Henri Bendel – > one of the packable hobo bags. They fold up so nice and then open up like a perfect, adorable tote.

Favorite Running Songs:

Running this week has been sort of bleh (more on this in Sunday’s post) but the music I listened to each day made me happy.

More Gap Finds & Favorite Links

 

Earlier this week I went to the Gap to find the GapFit barre top that I shared in last week’s Fashion Finds post but they didn’t have my size. I went to three Gap stores actually in one day looking for it!

I know I know, I should just order online but I don’t actually like to shop online when I can go to the stores and see things in person.

Not to worry, I discovered some new items at the Gap to buy instead. I cannot even get over how well I have been doing at the Gap. It feels as thought it has been years since the Gap was a store I could walk into and find things that I liked. Now it happens all of the time!

Gap Finds:

Supersoft Knit Short Sleeve T-Shirt Dress – This dress appears like one of those dresses that looks like NOTHING on the hanger but may be so cute once you try it on. Like, it’s either going to be shapeless and funny looking or super cute.

This dress turned out totally SUPER CUTE. I definitely recommend you give it a shot! The dress comes in a few colors but I bought the black. I think it’s the perfect dress to have in your closet because you can wear it casual or dress it up. It’s perfect for work and I can already see wearing it a multitude of ways this summer. Make sure you get it on sale though!

Softspun Knit Cross-back top – I love this top! It has a slightly open back due to the strappy styling (sort of like the backs of the work out shirts trending right now).

I bought the gray and went back for the black, that’s how much I like it. It can sit slightly off your shoulders and looks really nice if you wear one of those bras with straps that are meant to be shown. I paired the gray sweater with a bra that has white straps and I picture wearing the black sweater with bra straps that are pink. So many options here!

Linen Front Tie Tee– I bought two of these tops (white and pink) but had to return them for the next size.

I like my tops a little bit little longer these days but the XS was not that long on me (I am 5′ 4″) so I went with the small for the length.

And now I want this Gap Breath Off Shoulder Ballet Long Sleeve Tee. I can’t find it in the stores so I will have to order online!

It’s no secret that I love to shop. I don’t always spend a ton of money and quite often I’m able to seek out some really great deals which helps to balance the more indulgent purchases. One thing I always look for in my clothing and accessories purchases is that the trend is a classic one for me, meaning that I will want to wear it long after Vogue says it’s in style.

I found some cute things in the last few days that I want to share with you!

From the Gap:

This drapey split neck top. I bought this top in white and the black. The Gap is always running some sort of sale so make sure you don’t pay full price!

Also, pay attention to the GapFit section of the store and/or website. I was waiting for the running vests to go on sale so that I could put one away for next year and finally scored a bright yellow one on clearance! It’s no longer on the website but I recommend you search the stores for the end of season winter running apparel.

This GapFit Breathe Off-Shoulder Ballet Long Sleeve Tee is on my radar too. I didn’t buy it yet but I think I will this weekend. It’s too cute to pass up.

From Forever 21:

This hooded utility jacket in the dusty pink. You cannot beat the price and its super cute for spring!

Flannel seems to be back in style for a while now but even more so in a major way lately which always reminds me of the early 90’s. I went with this pale pink and navy distressed buffalo plaid shirt.

And can I just say how excited I am to be wearing my favorite star platform sneakers again now that it’s warmer and most of the snow has melted?!

Platform sneakers are a major trend at the moment, one that I will gladly accept for years to come. I love the extra height and how they look with leggings and jeans! The Shoe Box has a ton of styles which you can check out here.
