Oatmeal in a Jar + Cauliflower Pizza? + Salads

 

It’s Wednesday already! Time to share recent meals.

When I finished a jar of peanut butter last week, I thought ahead to save the empty jar for my oatmeal.

Remember when oatmeal in a jar was a thing? I really think it’s not a thing anymore but I’m making it a thing again.

I stopped saving my almost empty peanut butter jars to use for oatmeal quite a while ago. However, last week it made sense to keep the empty peanut butter jar not just because it’s so good when you can grab all of the extra peanut butter that sticks to the jar, but because I needed the container to bring my oatmeal to the beach to eat after my run.

It was as good as I remembered it! In the jar was my cold oatmeal (cooked steel-cut oatmeal and rolled oats) with blueberries, cherries, and cinnamon plus extra peanut butter.

My son decided we needed a whole array of food from Stew Leonard’s. Among other things, the grilled vegetables were of course my favorite. It was nice to eat something different vegetable-wise that wasn’t cooked by me. I added the grilled vegetables to a couple of salads.

I sent my son back into Stew Leonard’s another afternoon and asked him to grab a slice of their margarita pizza. Stew Leonard’s is a grocery store but not your average grocery store. They call it the Disney Land of grocery stores. I’ve seen their margarita pizza but never had it.

He claims they didn’t have any left so he got me a cauliflower pizza instead. When I made a face, he reminded me of how I used to make cauliflower pizza when he was younger and tell him it’s just as good as regular pizza but healthier so he just assumed I would still be happy with it. Gotta love my kid for his sarcasm that comes with a smile.

I cut the cauliflower pizza in half to heat up and then had it for two meals. It was good, but let’s be real – cauliflower crust pizza is not the same as regular pizza.

When I don’t know what to eat/have minimal ingredients in the house, I always like a toasted slice of cinnamon raisin Ezekiel bread with mashed chickpeas and avocado. I sprinkle everything but the bagel seasoning in when I mash the two ingredients together. I call this cooking. Oh, I may have added guacamole to this plate too.

Here’s a nice salad that involves a wider variety of vegetables. Lettuce, tomatoes, asparagus, corn, cucumbers, and Trader Joe’s colorful carrot coins with chickpeas and avocado. I also sprinkled everything but the bagel seasoning and added salad dressing (forget which one).

Oh, look what I made last night! We had a baguette in the house so I took a portion of it, cut it in half, and made it into pizza. It came out delicious!

Not pictured is the watermelon I had to get yesterday and quickly cut up (as I ate it). The heat and humidity left me craving watermelon so seirously that I just had to run out in the middle of the day to get one to eat. 🙂

Workouts + Quick Weekend Recap

 

We are talking my week in workouts today because I ended up running yesterday instead of Saturday so I figured I would hold off until this morning to fully recap the week.

First, you should know that my son left on his teen tour early Friday morning and of course called me looking for something in the luggage I packed for him because he couldn’t be bothered. But he called me even sooner than I expected!

He was looking for his toiletries.

I FREAKED OUT about this at first because it was just a big black bag placed in the main compartment of the suitcase so if he couldn’t find it, I decided it was somehow stolen by TSA.

However, after asking a few more questions through my shrieking, it seems my kid didn’t even unzip the luggage to try to locate his shampoo on his own before calling me.

While I stuffed random items in not so obvious slots, never in my wildest packing dreams did I envision him calling before even unzipping the suitcase! Such a boy.

Anyway! My workouts.

As I mentioned in Friday’s post, running earlier in the week was weird. I was much slower than usual and I honestly did not feel that blaming the weather was accurate. While I do not have cause for my slower pace, everything was fine by my treadmill run on Thursday, and even fine yesterday during the heat wave we are currently experiencing. Of course slower than normal days happen but they don’t really happen for me anymore so it was just weird!

Monday – 5 Miles

Nothing to say here other than I was much slower than I have been in 6 months.

Tuesday – 5 Miles

This was more like 4 miles plus a mile walking while on the phone. Maybe I felt a little more powerful than yesterday but still not myself. What gives?

Wednesday – 55 Min Pure Barre (sculpted arms)

I was due for a Pure Barre and was totally in the mood for one of the longer workouts so I went with one of my faves – sculpted arms. Even though it’s an arm-focused workout, it’s really a complete, full body workout the entire time. And it’s killer!

Thursday – 5 Miles (treadmill)

Happy to say I felt back to normal this morning! It was raining so I opted for the treadmill although I think I would have anyway. I really wanted to see if my pace would return to normal and inside would be a good test as I would not be affected by the summer weather.

5 miles in a little over 41 minutes was a good sign.

Friday – OFF

I left to take my son to the airport super early in the morning and then made today an OFF day because when I got back, I went straight for his room to start cleaning! Cleaning is strenuous stuff though!

Saturday – 45 Min Pure Barre/3 Mile Walk

I swapped my weekend run days around so today was a Pure Barre day instead of running. After Pure Barre, I went out for a walk and I believe I covered 3 miles.

Sunday – 6 Miles

Hot out there but my pace was in a normal range, especially for 78 degrees at 6:30 AM with high humidity! Who remembers when I used to run at least double this distance, even in this hot and humid weather? I must have been nuts. 🙂

Dinner Saturday night involved my favorite charred cauliflower pizza at Refuge.

Not a great picture because of how the sun hit our table but needed to share it anyway!

Oh and fudge from Kilwin’s! I only noticed the calorie listing after taking this picture for the blog which was after I inhaled my piece.

Weird week coming up with July 4 on Wednesday. It’s like – is everyone away because the holiday is smack in the middle of the week so they took off four days to make it a full week or is it just a random holiday on a Wednesday and you work the days around it? Or, because so many people took off, even if you work, it’s a quiet week? Not really sure!

I had to ask my friends to change the subject the other night when they kept discussing how time is flying. They are already up to school supplies, school schedules and summer being over.

New Strapless Bra

Finding an awesome regular bar is one thing but a great stapless bra that is comfortable and stays in place? Really hard to find. I am all excited to have found this b.tempt’d by Wacoal Strapless Bra recently at Bloomingdales. The bra fitter lady assured me it was a great one and she was right. It truly feels like a regular bra in terms of comfort, I can wear it all day or night without having a problem and most importantly, it stays in place. This bra also looks great in every shirt and seems to fit under everything I own without showing.

Henri Bendel Beauty Essentials Trio Set

I know I have mentioned the Henri Bendel Beauty Essentials Trio set in a previous Friday Favorites post but can I please tell you again how much I love these bags?! I use the largest bag from the Beauty Essentials Trio Set lately to organize my stuff inside my beach bag. All of my personal essentials fit inside (sunblock, hairbrush, tampons, sunglasses etc.) and it’s really easy to then locate what I need. The bags are waterproof, durable and really pretty too.

I never travel without these bags anymore either! I use all three bags for makeup, toiletries and anything else that I want to keep organized inside of my luggage. If I went to the gym and had a gym bag, you bet I would be using these bags to organize my stuff!

Cauliflower Pizza:

Um, how delicious does this chard cauliflower pizza look?! I shared this cauliflower pizza along with great salads the other night at Refuge. Salad and pizza will always be one of my favorite combinations!

This cauliflower topped pizza has been on my mind ever since I had it – I can’t wait to go back and have it again.

Fire Island:

I love that we walked to Fire Island this week! So I showed you what I ate the other night when we arrived at Surf’s Out for dinner but how about some pictures of the scenery.

Here’s the Fire Island lighthouse which by the way, is supposedly haunted.

The walk to Fire Island involves this boardwalk path for a bit until you hit a sand road. That’s when we spotted the deer.

And then before you know it, you are in Kismet, Fire Island and feel like you are on vacation.

I haven’t done this walk to Fire Island with my son yet because I’m afraid he won’t want to do the walk back but I guess at that point we could always return by ferry.
