WIAW- President’s Day

Half way through the week means half way through winter break. Although I am still working this week as usual from home, it’s nice not to rush in the morning because I don’t need to get my son up and out for school. We have a school art project to work on this week but other than that, it’s all fun and games for him.

Speaking of games, let’s take a look at what I ate on Monday, which was President’s Day, which was also the day we went to the Islanders game.

Breakfast:

Dimly lit first cup of coffee when I woke up.

Pre-Run small bowl of oatmeal with banana.

I made a protein pancake with blueberries in it and on top with peanut butter (of course) after my run. This pancake is similar to my three-ingredient pancake but different. Ha, that makes no sense.

This pancake, which I make fairly often, is similar to the three ingredient pancake because it involves egg whites and sometimes banana but this time was different because it was just egg whites, Skoop and coconut flour. I play around with it each time I make it. I really wish I measured things to share it as a recipe but I don’t so there’s that.

We stopped for some Dunkin Donuts coffee (because already have a few cups wasn’t enough) on the way to the Islanders game.

Lunch:

I brought my lunch with me which is something I tend to do for day games – peanut butter and apple on Ezekiel bread – and saved myself a ton of money.

Although just because I saved money on my lunch does not mean I was spending crazy on m&m’s from the Sugar Factory at the game.

I told my son not to overfill the bag because I refused to pay crazy pricing. I am still recovering from the price of the m&m’s from opening night so when his bag this time rang up at SIXTEEN DOLLARS, I denied the purchase.

To get back at me he chose a slice of carrot cake from Junior’s. He had to know that ordering such a cake would mean I wouldn’t touch it because it didn’t involve chocolate. The nerve.

The game was great though! They won and aside from that, I enjoyed myself. It sounds silly but I really struggle adjusting to the Islanders move to Brooklyn. I guess over time I will adjust and Monday’s game was a start.

Dinner:

The ride home from Brooklyn is longer than what our ride home from games used to be so we brought in Mother Kelly’s for dinner since I certainly didn’t feel like cooking.

Grilled eggplant over spaghetti squash with melted mozzarella cheese. Always a good one.
