What I Ate Wednesday 1.27.16

Time to talk food!

What I Ate Wednesday 1/27/16

Breakfast:

My breakfast has basically looked like this picture for the last several days. That’s what happens when you have fresh blueberries in the house. They overtake your oatmeal.

oatmeal with blueberries

Lunch:

I have been rotating two lunches – one sweet when I am in the mood for sweet and one a little more savory for the rare occasion when savory cravings strike.

First the sweet combo….

Grain free English muffin with peanut butter and blueberries.

grain free english muffin with peanut butter and blueberries

And now the savory…

I wanted something to eat with the plantains I bought the other day so I made an omelette. Or we can call it a scramble since it fell apart but whatever we call it, it was good and I have had it a few times since Friday.

omelette with plantains

Dinner:

I wish I always had the patience to let my sweet potatoes roast for a long time because when I leave them alone in the oven for a good 40 minutes, they come out the best.

I love them so crispy! I sprinkled these sweet potato wedges with garlic powder and paprika which is a winning combination, served with quinoa and roasted vegetables.

power bowl

Dessert:

I took the granola cookie crumble thing that I baked over the weekend and crumbled it on top of an apple with peanut butter. Best dessert idea.

I wish I could say I am heading outside for a run but I still live in fear of the 8 foot snow mounds in my community blocking my ability to see cars and their ability to see me. Oh well, gym it is!

Thinking Out Loud – May 28, 2015

Thinking-Out-Loud

Did you know that yesterday was National Sunscreen Day? It’s a great time to take a look at your sunscreen products to ensure you are using the best possible for your skin.

I put together a really informative sunscreen post last year that is worth sharing again because the information still holds and the products I recommended are still the same ones that I am using for myself and my son.

sunscreen

Click here or the above image for the facts about sunscreen post.

Did you know that so many of the sunblocking products available on store shelves are actually harmful? Yeah. They contain lots of ingredients that some studies suggest are actually worse for you than the actual sun.

Wondering which are the worst sunscreens on the market? Click here. And then go clean out your cabinet of the stuff.

In other news…

Lots of fruit in the house. My son requested strawberries and grapes.

grapes and strawberries

And I am still all about watermelon.

watermelon

The best supermarket thing to happen to me this week was finding fresh blueberries at an acceptable price.

english muffin with peanut butter and fruit

I am currently trying to ration them to myself but we both know that isn’t really working.

And the best peanut butter thing to happen to me this week?

#peanutbutterloversunite

I won the Peanut Butter & Co. giveaway on instagram! Do you see my oats in a jar in their photo?! I won, I won!

Can’t wait to see my prize 🙂

Talk to me about cold brew coffee. Do you make it? Buy it? Drink it?

I read this post the other day all about the benefits of the cold brew coffee and I am intrigued.

I had one of my favorite salads yesterday for lunch and no, I wasn’t at The Cheesecake Factory for a change.

Warm Cold Salad from Mother Kelly's

I went a majority of my life without eating beets. I hated them by sight which translated into hating their taste until one day I decided I should like them so I did.

I am due for a dessert trip to The Cheesecake Factory by the way. Especially since my birthday (June 5th) is next Friday!

I haven’t planned out which cakes and desserts I want just yet but the Factory Mud Pie is usually on my birthday list.

birthday mud pie

Factory Mud Pie from one of last year’s birthday dinners. Yum!

I have a few birthday desserts in mind but none of them involve me baking a darn thing.

I will bake your birthday cake and my dad’s chocolate fudge cookie dough birthday layer cake but I will not slave away in the kitchen on my special day.

I prefer to treat myself or be treated to something sweet without lifting a finger 🙂

A girl deserves a break every now and again, you know?

Be sure to check out what everyone else is thinking about today!

Which sunscreen do you use? Are you remembering to wear it while you run?!

If I was baking your birthday cake, what would you request?

Cold Brew Coffee? Should I be drinking it?

Let’s Catch Up!

Let’s start with my last Pure Barre class (for now at least) which I attended Friday morning…

pure barre

Fact: I do not wear makeup when I run or workout, regardless of who may see me. I would rather have uneven skin tone and appear half-asleep than breakout from makeup seeping into my pores while I sweat.

So my one-month New Client Special membership is now up. I attended twelve classes within the last four weeks. I loved each and session.

All of that lifting, toning and burning has absolutely made a difference in my strength as well as in my muscle tone and shape.

To be honest, I don’t study my body or inspect every inch of my curves in the mirror on a regular basis but I will say that my arms are more toned and I do think my waist is leaner (thanks to core work) and I pretty sure there is a difference in my “Pure Barre shelf” along with my seat.

I also notice a major difference when I am running in that my muscles feel much more stretched and balanced with a noticeable difference in my form with each step I take. Like, everything just goes in a nice stride if that makes sense.

Without the New Client Special pricing, we are talking more than just a couple hundred dollars for a pack of twenty classes. It is pricey to say the least.

If you have it to spend, it is absolutely worth it. It is such a terrific non-impact full-body workout that truly produces results in your strength, flexibility along with a fine tuning to your shape in those areas that usually matter the most.

After careful consideration of my other expenses though, other things come first right now, especially when you can order Pure Barre DVD’s and do the work at home.

Not that I ever in my life cared to work out in my living room before but I am so truly determined to keep up with my Pure Barre lifting, toning and burning and refuse to lose the fitness I have gained in just four weeks therefore I will push myself to make this work.

Besides, I think it will be a good thing for me to attempt and master so that I can inspire you to maybe do the same.

So the craziest thing happened to me Saturday morning while I was running.

Once again I was having what I thought to be ponytail issues only one mile into my long run.

It felt as though my hairtie was sliding out so I slowed to a walk to fix myself only to realize it wasn’t the hairtie, it was my new (bought on sale!) Lulu headband which completely slipped off of my head and fell to the ground!

lulu headband

I don’t even understand.

I put it back on and it didn’t slide off again but it was weird.

I should have bought these headbands instead….

headbands

As for my long run, I think it was over thirteen miles but less than fourteen? Not really sure.

Somewhere after the seven mile mark I decided to shut MapMyRun and just run for another hour.

On the topic of long runs, check out my post from exactly one year ago about skipping my long run because I was sick.

I may be extremely dedicated to my routine but I absolutely have my limits.

It’s always fun to reread old posts. It’s also always fun to order your favorite Cold Stone sundae and not let any drop to the ground.

cold stone sundae

In case you are interested, Cold Stone came out with a new flavor.

PB and J Ice Cream

I didn’t order it in my sundae but I did taste the new PB & J Ice Cream and it was delicious.

I usually order the yogurt as my main flavor instead of the ice cream varieties (the Chocolate Fudge Brownie and Cherry Vanilla yogurts are so good!) because sometimes the ice cream is just too much for my stomach.

Besides, it’s all about the toppings and the chocolate dipped waffle bowl anyways.

And, the biggest highlight of my weekend:

blueberries

That’s right  – $1.47 per container.

I can’t tell you how many people saw the advertisement for this special and contacted me to ensure that I was aware of the sale at Shop Rite.

My son is scheduled to have his cast removed this morning so since he is off from camp for the day, I also scheduled his orthodontist appointment in order to get all these appointments out of the way at once.

We have a full day ahead of us but I am hoping to get a new recipe post together for you for tomorrow; you may have caught a sneak peak if you follow me on instagram.

grain free banana bread crumble bites

Get your bananas ready. It’s a yummy one.

Have a terrific day!

If you go to Pure Barre, how quickly did you notice a difference in your strength and appearance?

Best thing you ate all weekend?

WIAW – Crumbs Closed Plus Lots Of Salads

I am very sorry if you didn’t receive yesterday’s post via email. I still don’t know why exactly the glitch happened but even if I was given an explanation, it would probably be in some technical language that I wouldn’t understand enough to explain to you anyway.

Before we get on with today’s post, the answer is YES, I am well aware that Crumbs Bake Shop has suddenly closed all locations.

I am honored to have received so many notifications from basically every person I know with links to the news reports, tags on facebook and other social media shout outs.

It is quite possible the downfall of Crumbs was due to the demise in my cupcake craving back in 2012.

I loved the Fudge Brownie one, I really did, and I loved the chocolate Fudge Chip and the Boston Crème (ohh the Boston Crème).

But I just kind of got over it so my few times a week Crumbs visits came to a screeching halt.

crumbs brownie cupcake

I am glad to have had my final Crumbs cupcake on Mother’s Day.

If Red Mango should ever go out of business, it would probably mean I got over my parfait habit but I just don’t see that happening so I guess we won’t see Red Mango suddenly shutting the doors. At least I hope not. I may now live in fear of this.

wiawphotobutton

Let’s talk about food. And coffee. I bought a new coffee flavor.

smores coffee

I was drawn to this flavor mainly because the thought of S’mores excited my tastebuds. I can’t say for sure that my cup of coffee tasted as though I was drinking marshmallows, chocolate and graham crackers but the smell made me happy and knowing the name was S’mores tricked me into thinking it was a really good choice.

Sort of like picking nail polish.

nail polish

I take polish selecting super seriously and like to find not just a pretty color but a polish name that fits my mood.

You should know I always avoided the color Starter Wife because I was afraid I would jinx myself by wearing it yet I still ended up divorced. Such a shame to think I went so long without wearing a pretty shade of pink.

Anyway, pre-run breakfast over the last few days has been different.

My appetite changes without warning. I was waking up in the middle of the night late last week starving which led me into the kitchen around 2:00 am for frozen banana chunks (don’t judge me or my choices) to all of a sudden not as starving in the morning before and even after my runs.

And along with the decrease in starvingness came the craving for the crunch of a super toasted English muffin instead of oatmeal.

english muffin blueberries

Just half of a whole wheat English muffin topped with mashed peanut butter and banana, jelly and blueberries is the perfect amount for me to eat right before a run.

I like that I can eat this literally twenty minutes before heading outside and not feeling as though I ate at all.

I don’t know why I find this half an English muffin more satisfying than a slice of my favorite cinnamon raisin Ezekiel toast but sometimes things go unexplained.

After my runs I haven’t felt like greek yogurt so I have been repeating the English muffin and peanut butter thing with lots of fruit.

My protein may be a bit lacking these last couple of days for properly balanced muscle recovery but I am not perfect and I have been adding chia seeds to the English muffins so I can at least get credit for that, right?

And if you are curious as to how all those pints of blueberries are doing, I am plowing right through them.

blueberries peanut butter

I love that I hoard yogurt store spoons and I really love blueberries (or really any fruit) with peanut butter. I snack on this combo all day long.

So in my attempt to stop food shopping so often, I have been making due with what I have on hand for lunch.

As I said on instagram the other day, I have a knack of creating healthy, tasty and satisfying lunches with minimal ingredients.

chick pea and rice salad

Chick peas, leftover brown rice medley, plum tomatoes, cucumbers, asparagus, peppers and lots of avocado.

Another great salad creation of mine involved sweet potatoes in place of the rice.

sweet potato salad

I highly recommend you roast a bunch of sweet potato wedges in advance and keep them in the refrigerator as an easy snack, side dish or salad ingredient.

I know I spoke yesterday all about saving money on groceries to support my summer weekend dining out habit and briefly mentioned our new weeknight meal planning but sometimes you just have no choice but to go out for dinner.

The other night, my son had an orthodontist appointment after camp. The orthodontist’s office isn’t all that close to home and the timing of the appointment combined with how cranky I get when hungry plus the traffic left us with no choice but to stop somewhere for dinner.

My son requested Whole Foods for the food bar. I hate to say no to the food bar but for the same price, I knew we could treat ourselves to The Cheesecake Factory where we would get more food on our plates plus a pleasant restaurant dining experience.

bbq ranch salad

I have let you in on my Cheesecake Factory money-saving tip in the past but in case you are new or forgot, I will tell you again.

Just don’t tell them I told you to do this…

The trick for dinner at The Cheesecake Factory is to order your salad (or other dish on the menu but I don’t know why anyone would order anything other than the barbecue ranch salad) right before 5:00 pm.

Technically, you still qualify for the lunch menu pricing but your server will figure you are there for dinner and bring you the larger-sized dinner portion.

You will eat it and love it and then when the bill comes and they charge you the full dinner price, you ever so kindly and innocently inform them that you thought by ordering before 5:00 pm (which the time on the bill will clearly show – 4:52 pm to be exact for us the other night), you were ordering from the lunch menu.

Bill adjusted. Dinner for the price of lunch.

You’re welcome.

Be sure to check out what everyone else is eating this week!

How To Save Money Grocery Shopping Without Coupons

I don’t watch very much television. I mean, I have a few shows that I consider must-see-tv and I have no issue admitting to you that Keeping Up With The Kardashians, Long Island Medium and Honey Boo Boo are on this list.

There is just something about that Boo Boo of a family that cracks me up.

I know Mama June ( who I cannot even grasp is younger than me) is an extreme couponer but I just cannot do it, no matter how I have tried.

how-to-save-money-on-groceries

Coupons are lovely and all but if you eat a ton of fresh fruits and vegetables, nutrient-dense foods, organic foods and more natural products, you aren’t going to find much success with the mainstream clippable savings.

If you watch Honey Boo Boo, you already know that if one of the clan utters a curse word, the punishment is to eat a vegetable.

In my latest attempt to save money in order to support my Red Mango and summer-dining-out-way-too-much habit, I have been looking for new ways to cut corners.

I always take a look at my monthly bills/expenses to see what I can eliminate or reduce.

Since I can’t give up electricity, I finally bit the bullet and canceled my old-fashioned daily newspaper subscription.

The main reason I was still holding on to newspaper delivery was for my favorite Sunday grocery coupon booklets.

coupons

Each Sunday I would get all excited to clip away only to be disappointed week after week to see only brands and foods I seldom eat or buy for the house.

I know we can print many a coupon from brand websites but I have also come to learn that this route doesn’t always save me much because I just end up buying more products or different products than I normally would costing me more money.

Not to mention, it’s time-consuming seeking out internet coupons and then printing them.

I got to thinking about other ways to save money on groceries without using coupons and wanted to share my thought-process/plan with you this morning.

Track the local store circulars:

Overall, Trader Joe’s will give me the best value if I need to pick one store to get the grocery shopping done.

They don’t accept coupons and don’t run sales but their regular pricing is decent enough that you are not overpaying when compared to other grocery store pricing.

However, if I have some time to hit an extra store or two, usually I can save some money by seeking out the weekly grocery store specials by sorting through the circulars each week.

grocery sale list

I jot down a quick list of the sales for the foods I may want in a language only I understand and keep the list in my planner.

I hate running to multiple stores but if the sales are significant, I am so there.

blueberries

I currently have six pints of blueberries in my refrigerator for $6.99. You can’t beat this deal and no, not one berry will go to waste.

Target Cartwheel app: If your local Target has groceries (which I think most do) check out the Target Cartwheel App for special savings.

I usually scan through the deals each week on my phone, click on what I think I may buy and then all you do is show the bar code to the cashier in order to receive the discounts.

If you have a Target Red Card too, that’s an additional 5% off of the total price. It may not sound like a lot but really, it all adds up.

My Target Red Card is set up as a debit card, meaning, it comes directly out of my checking account rather than act as a credit card that runs up a bill.

Limit grocery store trips:

This is a tough one for me. Keeping fresh fruit and vegetables in the house requires a few trips to the store a week.

However, popping in just for strawberries often leads to buying other things as well which costs more money than you intended to spend.

trader joe's shopping cart

I am going to work on skipping over a shopping trip or two that I think I need but really don’t.

I don’t need it all, all the time:

I just don’t need it all. I don’t need spinach AND kale AND romaine lettuce.

I don’t need broccoli AND cauliflower PLUS eggplant AND zucchini.

I am going to force myself to make my selections based upon what’s on special, skip the multiple types of produce and that’s that. No exceptions. I never have a vegetable go bad on me but I also don’t need to eat so many varieties in one week.

Dirty Dozen:

The organic food debate really deserves its own post entirely. Do you buy organic or do you avoid it because it costs more?

I do a little bit of both. I do what I can afford while keeping the Dirty Dozen list in mind.

I have read so much on this subject and the bottom line is, of course you want to buy organic when you can but the nutrients in the foods outweigh your risk from the pesticides.

Meatless Monday:

I won’t try to convert you to a plant-based diet but you should know that swapping out a meat based meal for plant-based will absolutely save you some money.

organic beans

A can of organic chick peas which offers about three and a half servings will cost you around $1.19 (at Trader Joe’s). A package of chicken cutlets will run you at least six dollars depending upon store and brand.

Honoring Meatless Monday as well as going meatless a couple more times a week definitely saves money and is good for your health too.

Use up what’s in your freezer before restocking:

Sometimes when I am grocery shopping I get all load-the-cart happy and throw things in that I will need….eventually.

I have stopped doing this and now try to wait until I use up what’s in my freezer and even my pantry before buying another bag of frozen vegetables or granola bars.

freezer

You have seen my freezer. We both know I don’t need another frozen item for a good month.

Costco and BJ’s isn’t always a money saver:

Buying in bulk gives you more food at a time but that doesn’t mean it works out cheaper.

If you aren’t going to eat five pounds of broccoli before it goes bad, you are spending more money on food than you should.

On this same idea, I buy the smallest container of skim milk because most of the time, we don’t even finish it.

And, if we run out, I can always buy more.

skim milk

It sure beats buying a half-gallon, paying more money and spilling out half of it.

Meal Plan:

I don’t meal plan. I don’t like having to decide what I for dinner Tuesday night on Sunday.

Rather, I keep the house stocked with my staples and throw it all together each day according to my mood.

I know that people love their meal planning and it can certainly help you to save some money buy shopping specifically for what you plan to make and eat.

Ironically enough, my son likes a meal plan during the summer. He comes home from camp really hungry and he enjoys planning out what I will have ready for him for dinner each night.

I think I will get a bit more into detail regarding our recent summer dinner meal plan next week but one of his favorites is “The Big Sandwich”.

big sandwich

He requests a big roll (whole wheat which I get at Whole Foods) with turkey, cucumbers, lettuce, pickles and mustard.

Cheaper (and healthier) than Subway.

If you ever wonder why I never run out of things to say, it is mainly because once I start typing, the thoughts start flowing. And, once I start writing one post, more post ideas develop.

From writing this post, I am now thinking we need to address the following:

  • Must-have foods (regardless of price/sale/special)
  • Organic, Hormones/Antibiotics in animal protein and the Dirty Dozen
  • Meal Planning
  • Easy Meatless Meals

I think I will get to work on those posts today!

Are you a coupon clipper?

How do you go about saving money on groceries?

Peanut Butter And Berry Quinoa

I had been mentally planning to run a four mile race this morning but was waiting until the last-minute to sign up because I wanted to ensure the weather forecast was ideal and that honestly, I didn’t have anything else on the agenda that I felt like doing instead.

I love to run and I don’t even mind running in the rain but I can run four miles any time I feel like stepping out my front door so unless the conditions are completely ideal to my schedule and mood, I am not paying and driving to a race location to run for thirty minutes.

I am super glad that I didn’t register in advance because the random hurricane that is passing on by is bringing more rain than my Lulu rain jacket and I find entertaining.

It actually isn’t all that rainy at this moment though so I will probably run outdoors for a bit anyway. Besides, I have something new to test out that arrived yesterday in the mail.

Pro Compression Calf Sleeves

I finally ordered a new pair of Pro Compression calf sleeves. I went with the sleeves this time because I am insane when it comes to my feet and when I switch between types of socks it affects my lacing and I can’t have that.

I know Pro Compression has a pair of stars and stripes socks which would probably fit the mood a little bit better today but I am not all that festive and would probably only wear such a thing if it matched my outfit which it probably wouldn’t because I wear more pink than red.

It’s not that I lack holiday spirit. I am all about celebrating freedom and independence but I don’t doily it up with red, white and blue and insist upon typical holiday activities and foods just because tradition says so.

It’s a free country right, isn’t that the point?

So even if today calls for consuming foods you would find at a barbecue, if I feel like Chinese food later, that is what I will have.

Without really trying though, I noticed holiday spirit making it’s way into my kitchen.

fruit infusion berries

Just throw some blueberries and strawberries in a bowl or even better, layer them in your fruit infusion pitcher. See? Now that’s the spirit.

Fact: The strawberries lose their flavor after being in the pitcher for a few days but the blueberries are still tasty enough to eat.

In all seriousness, I realized you may be looking for a quick, easy, tasty and rather healthy side dish/dessert to bring to someone’s festive barbecue today and I didn’t want to let you down.

fruity peanut butter quinoa

I had leftover quinoa this week so the simple sweet genius that I am created Peanut Butter And Berry Quinoa by combining quinoa, peanut butter, sliced strawberries, blueberries and a drizzle of honey to make this satisfying bowl of holiday goodness.

fruity peanut butter quinoa

This peanut butter and berry loaded quinoa was terrific as dessert last night and will likely make a repeat appearance as breakfast this morning.

Maybe with some greek yogurt if I am feeling all fancy.

It’s really quite simple to make and stores well in the refrigerator too.

[amd-zlrecipe-recipe:4]

This recipe is certainly not an exact science. Add more fruit. Add more peanut butter. Cover it in honey. Do as you please.

It’s a free country.

Thinking Out Loud- Maureen’s Kitchen

How do you feel about the word coincidence?

Thinking-Out-Loud

Some say there’s no such thing, that everything happens for a reason, reasons which may be higher than our ability to explain or rationalize.

Sometimes I agree with this controversial theory and sometimes, things just seem coincidental.

I find it oddly coincidental that my post about running and motherhood  from last week was featured on Blogher yesterday, the same day as my son’s graduation from elementary school.

He may only be ten, he may only be entering middle school but really, it’s kind of a big deal in our lives.

I mentioned in that post how those moments where your children need you every second are short-lived. It is so true.

The time flies by so quickly that I just cannot grasp or understand how my little bunny is old enough to now switch classes, have his own locker as well as request that I not speak to him at school functions.

I can’t help but feel grateful that I had the opportunity to be a stay-at-home mom for so many years where I was able to spend basically every second with my son.

Some moments were pure torture (any mom who fails to admit this is lying to you) yet I wouldn’t trade the memories for the world.

I can now look back on some of those torturous moments which were captured in pictures and laugh.

When we look through photo albums, I tell him the stories of his monstrous newborn nights, how he had me chasing him into bushes when he was an active toddler, that he was photographed inside the giant ice bucket because he felt the need to always climb inside at our barbecues and I never leave out that he didn’t sleep through the night until he was well over the age of four.

Beginning at the age of two weeks old, I slowly introduced him to the world of dining out. It was an outing for us to go out for lunch. It built some routine and structure into our day as well as taught him how to sit in restaurants.

I like to think that the quality time the two of us spent together (and continue to spend when he deems it okay for him), has also helped him to develop proper foodie skills.

cinnabon french toast

You know you have done your job as a mother when your son orders the French Toast Cinnabon special at Maureen’s Kitchen as his post-graduation brunch.

cinnabon-french-toast

Maureen’s Kitchen is a special breakfast spot here on the island where basically any day of the week, expect a wait to be seated in the cozy cow decorated kitchen which serves ridiculous breakfast delicacies including this special cinnamon bun sliced open and cooked French toast style with bananas and chocolate chips.

coffee

To cut down the wait time, we opted to sit at the counter which we both find entertaining since we get to watch the kitchen in action.

pancakes

Some parents educate their children through museums. I opt for opening my son up to the inner-workings of fabulous food establishments.

Of course I went with the baked oatmeal.

baked oatmeal

I don’t know how to order anything else when baked oatmeal is offered on a menu.

baked oatmeal

Please don’t ask me what’s inside the oatmeal. I haven’t a clue. It is always different. It was definitely cinnamony. There may have been a raisin. Possibly a nut. Can’t place the other fruits but it all cooked and mushed together especially after I poured the warmed milk on top.

baked oatmeal

I decided that the waitress saw my post last week regarding my obsession with blueberries and bananas since she offered me a separate side dish of my latest combo to add to the oatmeal.

Believe it or not, school doesn’t officially end until tomorrow. Today is a half day so my friend and I will be picking our kids up around lunch time to head into the city for another graduation restaurant treat in the form of Max Brenner.

Bring on the chocolate.

WIAW – National Strawberry Parfait Day

I still haven’t had a chance to replace my son’s cell phone. I realize that if it were my cell phone that somehow landed in a pool, I would have found the seconds to sit at Verizon but it wasn’t mine, he is only ten and being unfaceplanted from FaceTime for 48 hours isn’t the end of the world.

And, you should know that once again my suggestion to use a regular landline phone was shot down because, “those phones aren’t normal”.

If a regular phone is considered not normal, I have lost all perspective on what normal is. It’s not like I said use a phone with an actual cord or even a payphone. Do they still have payphones? I haven’t noticed one recently.

wiawphotobutton

I know I eat a lot of the same things (and I know you do too, just admit it already) but sometimes there is reasoning behind why I choose the foods that I do.

Pre-Run Breakfast:

Last week I was all excited about my switch to the Ezekiel raisin toast topped with peanut butter/banana mash and blueberries.

After a couple of mornings, as much as I love that combination, I found it not to work for me before I run.

When I say it didn’t work, it left me hungrier than my routine bowl of oatmeal.

oatmeal

They always said that oatmeal sticks to your ribs.

Perhaps the water content in a bowl of oatmeal makes a difference or maybe it’s the rate at which we digest the oats versus the bread? Whatever the reason, I find I run happier without a grumble in my stomach when I choose a small bowl of oatmeal with some fruit and a little PB2 or peanut butter (or both).

I would probably need two slices of the toast in order to feel “right” but while that may satiate me for a longer period of time, I know that it would also overfill my stomach before running.

It’s a tricky thing when you need to eat before a run. You don’t want to be hungry but you certainly don’t want to be too full.

Determining what too full means to you is all by trial and error and cannot be based on what may work for someone else.

Post-run breakfast:

My blender made a short appearance last week after my runs but it has since been placed back where it belongs in the cabinet.

post run meal

Cold oats with fruit, plain greek yogurt and peanut butter always leaves me satisfied.

Lunch:

I have added a terrific summer salad to go alongside my usual chick pea/avocado mash on toast.

summer salad

Roasted asparagus and kale combined with chopped cucumbers, plum tomatoes and avocado.

I refer to this salad as a summer salad because it contains a good mix of vegetables that won’t poof and bloat my stomach.

Not to mention, the healthy fats and potassium in avocados (more than in a banana!) helps to reduce water retention as well.

I have no patience for that overly full feeling, especially during the summer.

Mentally I like to feel full but not actually look full if you know what I mean.

Water of the week:

camelbak filtered water

To my surprise, I received a special package from Fitness Magazine which contained a new Camelbak Water Filtration Pitcher, a few hair ties and a notice about the upcoming Meet and Tweet scheduled for October.

I am absolutely in love with this Camelbak pitcher! It blows away the Brita pitcher in terms of size and the speed at which you can fill it up and the water is filtered – WOW.  It is so fast!

water pitchers

I use the Camelback filtered water to pour into the Fruit Infusion pitcher which this week is flavored with strawberries and lemons. So far this combination is our favorite.

Dinner:

I take saving money seriously. I try not to eat out during the week and do my best to throw together easy dinners when I need to, even if it means making them portable in order to avoid stopping for take-out more often than I should.

chickpeas rice stir fry

The other night when I needed to set up and attend my son’s class graduation party, I knew I would be hungry. Before I left for the party, I quickly put together a Pyrex container of Trader Joe’s brown rice medley, chick peas, a steam bag of vegetables and avocado flavored with sweet chili sauce.

Find me something easier, cheaper, more balanced and portable.

Dessert:

This never disappoints.

fruit peanut butter chocolate chips

Fruit bowls such as this have been making appearances throughout my day, not just at night for dessert.

Blueberries, strawberries and bananas in a bowl with peanut butter and chocolate chips.

Mix it all up and then wonder why you ever crave anything else.

Oh wait, before I go, I just found out that today is National Strawberry Parfait day!

I think that means I deserve a Red Mango parfait, don’t you think?

I am really proud of my parfait-making ability. We all need to be good at something and this might be my something.

Be sure to check out what everyone else is eating today!

Do you use a filtered water pitcher? Which one?

Which foods work for you before you run? Does one extra bite affect you if you eat too much?

Do you still have a landline phone in your house?

WIAW – The Blue Banana

Last year my mother forced me to try on a dress that I knew I was not my style, was too form-fitting and most likely too short. You love how your mom can still make you try things on even when you are in your thirties.

When I came out of the fitting room, we both agreed I looked like someone who belonged at The Blue Banana.

Please tell me you know The Blue Banana. You know, the club from Pretty Woman?

We aren’t going to talk today about how to dress for your body type (although maybe we should one day) but we are going to talk about the abundance of blueberries and bananas in my life at the moment.

As I put together today’s What I Ate Wednesday post, I realized that I have been eating a ton of fruit lately.

Some people shy away from fruit or limit their portions in fear of the sugar content. I am not one of those people.

Some days I do not want salads. Some days I do. Some days I do not want a ton of vegetables. Some days I do.

Some days I crave more protein. Some days I crave less.

I can’t force myself to eat something I am not in the mood to eat nor can I ignore a craving, especially a fruit craving. Why talk yourself out of fruit?

Breakfast yesterday is about to look like it belonged in someone else’s kitchen.

pb banana toast

Like, who am I? I don’t know either but I woke up wanting nothing more than a toasted slice of cinnamon raisin Ezekiel bread with a mixture of mashed banana and peanut butter (PB2 mixed with Crunch Time) with blueberries poked on top before my run.

I highly recommend mashing your banana into the peanut butter before spreading it.

If that wasn’t enough to confuse you, my blender has been making an appearance after my run.

smoothie mug

This mug contained my version of a smoothie, if we can even call it a smoothie.

I am the last person to ask about how to make a smoothie. I never measure anything, I don’t use protein powder, or almond milk (allergies!) or anything green.

All I did was blend up some frozen Very Cherry Berry Blend, a handful of fresh blueberries, a few frozen banana chunks, some cooked oatmeal for texture,  drop of skim milk and a spoonful of PB2.

I didn’t even add greek yogurt for the post-run protein boost. I wasn’t in the mood. I just wanted something thirst quenching, fruity, cold and slightly chewy.

When it was finished blending, I added in regular peanut butter for more chewable texture and ate it with a spoon.

very cherry blend

I found the Very Cherry Berry Blend in the back of my freezer. Can we talk about my freezer for a minute?

freezer

You may have already seen my organized mess of a freezer on instagram.

I was having problems with my refrigerator last week in that it wasn’t stay cold. The maintenance person told me my freezer was overloaded which was causing an issue somehow with the temperature.

I don’t know that I believe my overload of frozen vegetables has been causing the appliance issue but since then, I have been trying to use up the food in the freezer and I found the bag of Very Cherry Berry Blend wedged in the back. I like saying very cherry berry over and over but don’t really like to keep typing it.

I know you are wondering if I am still using the Fruit Infusion Pitcher and what fruits are in the center cylinder this week.

This week I layered blueberries and lemon slices with cucumbers on top just because I was eating them while I filled the pitcher.

I don’t know that the cucumbers go with the mixture but it’s my pitcher so I can do what I want.

cucumbers and hummus

I don’t love hummus but it goes nice with cucumbers as a snack.

I really try to limit my Red Mango lunch parfaits to the weekends but having a gift card has given me an excuse to go more often.

Layers of original and strawberry greek yogurt with blueberries, strawberries, Nature’s Path Pumpkin Flax granola and dark chocolate chips.

Perfect lunch, don’t you think?

Remember last week when I was craving corn? I actually made one of the recipes I mentioned for dinner.

quinoa-dinner

The recipe for Sweet Corn and Quinoa with honey lemon vinaigrette was super easy and I followed it pretty closely. I just added in extra vegetables (from the freezer!) and avocado to round it out as a meal.

I highly recommend it. It has a nice light flavor which is perfect for summer when you don’t feel like something too heavy.

You would think that come dessert time, I am tired of fruit. Not the case this week.

fruit

I haven’t been eating too many apples with peanut butter but bowls of berries and bananas with peanut butter, that’s another story.

dessert

With whipped cream on top. It’s so simple and perfect.

I absolutely refill the bowl. How could you not?

I keep thinking that I should bake up something with all of my berries but sometimes it’s just not necessary to put in the extra work and get all fancy like that.

I am off now for another sweaty summer run. Be sure to check out what everyone else is eating today!

Is your freezer organized, an organized mess or crazy stuffed like mine?

Do you eat according to your cravings or force yourself to eat based upon the nutrients you feel you should consume at each meal?

Do you eat the same breakfast everyday or routinely switch it up?

Thinking Out Loud – Did I Tell You…

I talk and text with so many people in a day and I consider my blog writing a form of communication as well therefore I often forget who I tell what and in what form I tell it.

Thinking-Out-Loud

Did I tell you…

That Lulu Lemon has an in-house tailor? You can even have your work-out tops shortened if you find that they are too long. I didn’t know this so if you did and didn’t tell me, that isn’t very nice.

I decided yesterday that walking into Lulu Lemon is like being in Disney World and walking into the Disney gift shops. You are immediately brain washed into thinking you need everything when in reality, you just don’t.

I don’t need this bag just like you don’t need the Minnie Mouse beach cover up with matching sandals to coordinate with the Disney dish towel set which pairs nicely with the Mickey kitchen utensils.

Ugh but the bag is cute and functional and water proof and did I mention cute.

Did I tell you that asking a girl out in the fifth grade and her saying yes really just means your instagram profile will now include your “girlfriend’s” name with a heart next to it? Welcome to the social media generation.

I decided it’s not fair that kids today have their own cell phones and never need to stress over calling a boy’s house and having the mother answer where you choke and hang up due to fear and embarrassment.

Did I tell you that I got a new pair of running shoes?

sneakers

Clearly I have a color theme which is so not done on purpose.

I burned through my latest pair of yellow Adidas Energy Boosts fairly quickly but that’s what happens when you run a lot of miles each week, especially when those miles are taking place outdoors.

I got lucky that the Energy Boosts were left in my size in dark pink this time around.

As I said in Tuesday’s post, proper running shoes are crucial. You can’t wear poor fitting sneakers and you certainly cannot run in worn out, too-many-miles-on-the-soles sneakers and expect to run happy.

Sometimes your knees hurt, hips ache, calves burn, heel hurts, hamstrings pull to the point where you think you are injured or just not made for running when in reality, nothing is wrong other than you trying to run in the wrong pair of sneakers.

Did I tell you that I am contemplating giving away my pink jean shorts?

I am not ready to graduate to mom shorts but I decided the pink ones are the shortest and maybe need to be retired to someone who can wear them age appropriately.

My friend’s daughter would like them. She is nine. Makes sense.

Did I tell you that I am currently obsessed with corn and recipes that contain corn? It started last week when I kept eating my favorite salad.

Corn. I just want corn.

I spotted roasted corn on someone else’s table the other night at Rosa Mexicano and became sorry we ordered the roasted plantains as a side dish. Although those plantains were good. Like really good. I need to start buying plantains.

Here are the corn recipes I recently pinned and need to make:

Farmer’s Market Skillet

Sweet Corn and Quinoa

Black Bean And Sweet Corn Guacamole Dip

And while on the topic of recipes I need to make, now that I have an abundance of blueberries, I must make Davida’s Roasted Rosemary Brussels Sprouts with Blueberries.

It would help if I had Brussels sprouts in the house. Why can’t I ever have every ingredient that I need at the same time?

Be sure to check out what everyone else is thinking about today!

******************

Do you suddenly crave random foods for days on end?

Did you used to freak out calling a boy’s house (or a girl’s house) when you were a kid?

How do you usually tell you are due for a new pair of running shoes? I can usually feel the front  of the shoes are worn through and this time around, I had heel pain in both feet.
