Instead of complaining to you about the snow that is falling once again outside, let’s jump right into What I Ate Wednesday. Not that I am encouraging emotional eating or anything but food at the moment is our savior.
Just when you think you can’t further your level on the Food Genius Scale, a lightbulb goes off in your hungry head and you manage to reinvent breakfast.
I felt like cereal the other morning which never happens for me. Instead of pouring a bowl since I know that cereal would do nothing in the satisfy-the-appetite department, I got a tad creative.
I took Nature’s Path Flax Plus Bran Cereal (like raisin bran without the raisins mixed in the box) and crushed it a bit in a mug, poured in egg whites for protein and puffiness, added in some raisins and into the microwave it went for about 90 seconds.
You can eat it right out of the mug or pop it out onto a plate.
Of course I topped it off with some peanut butter and a sprinkle of granola (which I added into the mixture yesterday morning before microwaving).
I think I use yogurt store spoons because they add a perfect additional scoop of peanut butter to my meals.
Quick Recipe:
- 1/2 cup cereal of choice (you can add more but I found it to be TOO filling when I used the full cereal serving – I was too full when running right after)
- 2 egg whites (or about 6 tablespoons if using liquid egg whites)
- any mix-ins you wish – banana, raisins, strawberries, apple, blueberries, nuts, peanut butter etc.
Slightly crush cereal in a mug. Add in egg whites and toppings of choice and mix. Microwave for about one and a half minutes. Top with peanut butter, granola and/or additional fruit.
I do believe these cereal muffincakes would work well with any cereal you choose. And the egg whites? Perfect protein source in the morning. We are talking like 10 grams people. Combine that with the healthy does of carbs, fiber and filling fat from the peanut butter and you have yourself my idea of perfect breakfast.
I am so glad I gave cereal another chance at breakfast because I have missed it’s texture and flavor.
Speaking of second chances, do you ever give a restaurant you didn’t love but think you should learn to love a second chance?
I gave Zinburger a second chance on Sunday. If you recall, I ate there last weekend and wasn’t impressed.
Sunday however, I ordered the Ahi Tuna salad and loved every bite.
As well as the onion rings. The barbeque sauce was divine as well. I love BBQ sauce in case you didn’t know.
FACT: I love dessert but only after dinner.
NEW FACT: If someone orders the chocolate cream pie at Zinburger I will break my daytime dessert rule because it is too good to pass up.
Adding whipped cream from the pie into your coffee is never wrong.
Dinner lately has been the same old same old so rather than bore you with which vegetables were roasted this week, I was able to gather some photos of quick weeknight meals that occured for the little boy over the past few days. And one salad picture because we need a dose of our five-a-day in this post.
Whole Grain English Muffin Pizzas, Omelettes with roasted potato wedges and Chickenless tenders with sweet potato tots and natural applesauce.
You kind of want to dine at our house on a random weekday night, don’t you. Admit it.
DESSERT:
Sometimes I fascinate myself with new ways to reinvent the apple peanut butter wheel.
However, you will have to wait until tomorrow for the full dessert details.
