I apologize if you had any trouble logging into my site yesterday. From what I understand, my site was causing problems somewhere on the server so they shut it down on me and then had me do traumatic things in FTP in order to get it back.
Please don’t ask me what I had to do or what exactly was wrong because I don’t even understand what I am saying but I think I fixed it for now. If I continue to have problems though, I am going to switch hosts but that scares me because I am not good with change although I may have no choice.
Anyway.
It’s What I Ate Wednesday which means we talk food but I often talk food just like I did yesterday when I told the old but important story of the time I had cookies for dinner.
Let’s discuss what I ate yesterday which might as well be what I ate for the last two days since I basically repeated most of what you will see below both Monday and Tuesday.
Breakfast:
The usual pre-run breakfast of a small bowl of oatmeal and a piece of a banana with coffee. I took the picture before heating the oatmeal and banana up in the microwave. I like my oatmeal to be really soupy before my run because I find it easier to digest that way.
After my run, I did something slightly different! I went back to eating greek yogurt this week and really enjoyed it both mornings combined with cold oatmeal and berries. I used to eat my post-run breakfast with greek yogurt just like this every day for a really long time which you may recall.
At some point last year, I stopped eating greek yogurt because I decided that I no longer liked it (which always happens after a stomach virus).
I am not ready to go back to eating plain greek yogurt though. I have to adjust to such a taste since it has been so long so instead I had some of my son’s Vanilla Chobani 100. I really liked it!
Lunch:
In between conference calls, I toasted a slice of cinnamon raisin Ezekiel bread and then topped it with peanut butter, raspberry jelly and banana slices. I had another slice just like this a few hours later just without the banana slices.
I like when I eat “lunch” this way because then my stomach never gets overly full. I cannot handle the overly full feeling during the day.
Dinner:
Simple yet delicious dinner of a Dr. Praeger’s Veggie Burger, oven baked fries and broccoli. It’s meals like this that I could live on forever.
I love when I have enough patience to let my oven baked fries cook long enough to get super crispy!
It had been a while since I made oven baked fries from a regular potato since I normally survive on sweet potatoes and Japanese sweet potatoes. Nothing quite like a regular white potato, you know?
Dessert:
I am sort of done with apples and peanut butter these days. I just don’t want the combo at night like I usually do and when I go to eat it, I realize it’s really not what I want! I am working on figuring out what it is I want after dinner but for now, Ralph’s Ices works really well for me.
Oh, and I had watermelon throughout the day. I almost forgot about that.

Which greek yogurt do you like the best?
That banana toast looks good! And how do you always make your oven fries look so perfectly golden brown and crunchy?? Is there a secret? I feel like mine always turn out blah and soft.
oh! I don’t know? I just slice them up and roast in the oven at 450 degrees. The longer I leave them in, the crispier they get. To get this crispy, I find it takes a good 40 minutes. I don’t always have that kind of patience though! I spray them with coconut oil cooking spray too, not sure if that helps. I think the key is really the long cooking time. 45 – 50 minutes may give you the best crispy outcome.
You know I feel your pain with the technical drama. I didnt notice your site was down but thats annoying. I got an email on Sunday that my site was down, but I think it was only for a few minutes. So strange!
I’m still enjoying dark chocolate for dessert these days, unless I bake something.
I think the sites go up and down often and we don’t even know about it. I was hoping this time around it would go up on it’s own but that wasn’t going to happen. I am grateful I was able to follow the instructions to get it back up myself! don’t ask lol
Funny this s the exact diet I was raised on!!!! Dinners like that and breakfast and lunches were exactly yours above. Oatmeal/banana, yogurt/fruit and pbj. An occasional graham cracker with a cup of herbal tea or coffee thrown into the mix with jam. It served my parents very well healthy, thin and full of energy there whole lives.

Peanut butter!! Such a yummy treat for me and can work easily into a healthy day of eating.

That day of eating sounds like something I would love! I do love Greek yogurt (love Fage plain), peanut butter toast, and homemade fries. And Ralph’s Italian ice? You’re killing me!

I think my favorite greek yogurt is Chobani, but I do really like the Fage plain yogurt. Actually my very favorite yogurt is cream-top? Have you had it? And the technical side of blogging is still something that has me scratching my head. It just doesn’t make sense a lot of the time to me. Google is so helpful, but some times it just has to work out itself. :o)
I like fage better than chobani and probably like stonyfield the best!
I love russet potatoes for oven fries. And they have a great nutritional profile – it’s when people peel them and cook them with an obscene amount of butter that they’re unhealthy.
I eat plain Chobani. We tried whole fat plain Chobani the other week and it was so creamy!
I know I’ve had the whole chobani in restaurants for brunch and it’s crazy creamy but I don’t think I could eat it every day!

ANYWAYS, I seriously can't deal with tech problems. I've had my fair share of them with Spoons, and they always stress me out hardcore. And every time I feel like I've figured one out, something different goes wrong.

I love my trader joe’s dark chocolate caramel wedges for dessert. It’s the perfect amount of sweet but not a giant treat like I eat on the weekends. Reading this made me so hungry. I need to make it another 50 minutes until lunch. Send help.

I laughed out loud at your post yesterday because I am the same way with my hunger! While I do have a website/blog, I haven’t been doing ANYTHING lately with it–terrible I know-I wouldn’t even know if there was an issue…OOOPS. Not feeling the blog thing at the moment, so going with it!
I don’t enjoy greek yogurt–but wish I did as I know it has loads of protein and is a great breakfast/snack etc.
My after dinner treat is usually of the chocolate variety–homemade peanut/butter or almond butter balls is my favorite recently. I make a lot at a time so they last for a long time!
I didn’t touch greek yogurt for a year I think. I totally go through phases but right now I am liking a little bit in the morning.
I love making oven baked fries – they’re so much healthier than the fried version, and I don’t think they’re any less delicious! Also, that veggie burger looks pretty tasty. I might have to check out that brand.
I love dr. praeger’s, definitely try their burgers and other things if you haven’t yet.
My go-to dessert is unbaked cookie dough (and it’s not the stupid chickpea kind). Maybe I’m weird, but what I do is make a batch of cookie dough (any kind I’m in the mood for–chocolate chip, peanut butter, etc; brownie batter works, too) with no egg and no leavening agents (like baking soda). I then put in the fridge and then scoop some out and heat it up in the microwave when I want to eat it. It won’t bake like cookies, but you’ll get warm, gooey cookie dough. I replace any type of fat that the recipe calls for with unsweetened applesauce and I generally find using oat flour or almond flour works best for this. My boyfriend thinks this is totally weird, but it’s great because a) you don’t have to actually bake anything, and b) it keeps in the fridge, so you don’t have to worry about stale cookies if you don’t eat them all within a few days.
totally agree with your dessert! I have definitely made that before and should probably do it again so I can have it as a snack every night!
Current favorite after-dinner snack is a little plate of fruit, baked sweet potato, trail mix/pistachios, and dark chocolate. My favorite Greek yogurt is Chobani, and I’m sooo glad that reintroducing it into my diet is working for my stomach. I love the 2% flavors and the nonfat plain. I find that if I’m eating fattier Greek yogurt, I need the flavor to cover up some of the creamy taste. I’ve had whole milk Greek yogurt that felt and tasted like butter and I totally couldn’t do it. And it’s not Greek yogurt (and more expensive), but I’m also obsessed with Siggi’s vanilla skyr!

I used to FLIP THE F out if my blog didn’t work or something wasn’t right. But now…? NOPE. If it is down or whatever, I just let it work itself out because typically within a few hours (or even nano-seconds, lol) it’s up and running again. I’ve only had like 2 or 3 really big issues with the blog. KNOCKING ON WOOD over here – ha, but each time, I was able to reach out to those I trust and they helped me fix them! 😉
