I had gotten myself a little too busy working on Bar Mitzvah stuff over the last several days rather than working on a post for yesterday so if you were wondering where I was, there’s the answer. In fact, should I continue to randomly miss my normal posting days between now and October 15th, that will most likely always be the reason why.
You are probably tired of hearing about the Bar Mitzvah just as much as I am tired of planning it but this is my life right now. I am really getting down to the nitty gritty parts of the planning which is overwhelming and wonderful at the same time. I am looking forward to the party, of course, but I am also looking forward to when it is over so I can have some of my brain space back.
So it’s Wednesday already but we are going to look at what I ate on Monday.
My friend Dina and I both work for the same company (which I am pretty sure I have told you in the past) and since we both work remotely (or from the city office on occasion) we mixed things up on Monday by working from my house as if we were an office.
It was nice to set up our laptops at my kitchen table and work independently yet together for a change!
Breakfast:
I had my usual pre run oatmeal and coffee followed by oats in a jar after my run. I really need to stop using my almost empty peanut butter jars during the week because I really do like to save them for after my long runs on the weekend but I just couldn’t help myself.
Dina arrived shortly after I ate and we snacked on watermelon during the morning while we worked.
Lunch:
I can be so lazy in meal preparation but I wanted to put together a nice salad for us so we didn’t have to go out to eat. I have been eating out way too much and honestly, I am quite capable of making a salad that is much better than any restaurant.
I call it the Power Salad.
In the mix:
Roasted cauliflower
Roasted sweet potatoes
Roasted grape tomatoes
Quinoa
Feta Cheese
Avocado
This Power Salad does not need dressing. The flavor of the roasted vegetables combined with the feta cheese and avocado reduces any desire for additional flavor or texture.
Roasting your grape tomatoes will really heighten their flavor. Trust me, do it.
Dinner:
I picked up a spaghetti squash while I was in Stew Leonard’s so I roasted it along with some vegetables. Topped with tomato sauce and mozzarella cheese, it’s a perfect vegetarian meal.
Dessert:
I have gone back to warming up my diced granny smith apple in the evening and then topping it with the following:
Peanut Butter
A sprinkle of Skoop B-Strong
A drizzle of Midnight Moo
Trader Joe’s Muesli
It’s cooler than usual outside this morning (67 degrees) so I am looking forward to running a few easy miles before some Pure Barre. Have a great Wednesday. 🙂

I’ll work from home very occasionally. Like if my office is closed but I still have to work. I usually end up eating really random meals that are some combo of whatever i have in the house. It’s such a nice change and I wish I could do that at work. I find that on weekends we just have less food in general because we havent done grocery shopping or cooked anything so my options are more limited.
it’s nice to have the chance to work from home sometimes! I wish I could have back in the day at my prior jobs
Perfect salad! I love rooted veggies in a salad but I haven’t done grape tomatoes even though I eat them constantly. Lately I’ve been throwing together lunch in 5 minutes usually with greens and leftovers. Since the kids are home I have to make for all of us and of course they wind up getting priority!
definitely roast the tomatoes, it’s a great flavor
That power salad looks so so good!! I’d maybe add some arugula and nuts- maybe toasted almondsa or sunflower seeds.
or walnuts – those would be great for the crunch too
OMG that dessert. I am drooling over here! I am teaching twice today so no other workouts for me. I’ve got some yoga and a boot camp class on the schedule for later in the week.

Yum that salad looks so good! Can that be our power bowl recipe this week? This week I’ve been combining quinoa, spinach, pumpkin seeds, butternut squash, and tahini for my power salad.

I work from home!!! I love all your lunch eats. Working from home is so nice, because I can get up and walk around, and then I go back to my standing desk.
That power salad looks delicious. I would probably put cheese, some sort of seeds or maybe meat on mine along with lots of veggies. I would probably do less lettuce because it’s more water so it doesn’t keep me as full.
Today I’m doing some weights. It’s actually kind of a nice recovery day from running!
I liked the feta cheese in this salad.. it’s also really good without lettuce if you up the amount of other ingredients

I don’t really enjoy working from home just because I need human interaction. I’m naturally very introverted so I feel like if I worked remotely all the time, I’d never see another person haha It will be nice to work from home on Fridays once I’m fully trained so I can beat the traffic to Rhode Island. You know I’m all about making my own salads with roasted potatoes. I’m already excited for dinner so I can make one.
I definitely love working from home but may not have straight out of college. I think it’s good to get that office life experience!
I feel like working from home would be way better because I’m capable of organizing my schedule and it would cut the commuting and also make it easier to cook my meals 🙂 Sadly such is not life for lawyers!
I definitely like working from home for those reasons! some of the lawyers I know are able now to be more flexible in terms of working from home some days- maybe at some point down the road that will work for you too
I usually eat leftovers for lunch or if it’s a grocery shopping day I’ll pick up one of their deli sandwiches to eat later!

Got 14 miles done this morning. Heading out on vacation tomorrow (Charlottesville, VA + Cape Cod) through Monday so wanted to knock my long run out today so I could enjoy the weekend!

That salad is pretty much perfect! I love roasted tomatoes; I almost always roast them in the winter when they’re not quite so good raw 😛

I love using roasted veggies in a salad. They add so much flavor and crunch. I usually dice mine up really fine so I get some in every bite!
