I forgot to tell you that I had a really good veggie burger over the weekend at Zinburger. Do you have a Zinburger near you?
What I really liked about this veggie burger was that it was nicely well done and crispy on the outside, didn’t seem to contain filler and was loaded with veggies.
Just like when you order regular burgers at Zinburger, you can add toppings so I ordered my veggie burger with sautéed mushrooms and onion rings. My veggie burger came with two onion rings. My son snagged one of them before I could stop him. I am still angry with him. He kept saying that I would be laughing about it in six hours. It has been six days and I am not laughing, in fact, I am still yelling at him about it with a serious face. The two small French fries you see on my place are there because I grabbed them from his plate after the onion ring situation occurred.
I don’t often eat veggie burgers aside from the occasional Dr. Praeger’s Veggie Burgers which I heat up at home but now I feel like getting crafty and making my own. I went through the veggie burger recipes I have pinned to my vegetarian recipes board on pinterest so here are the pins that I narrowed down to possibly peruse for making this weekend:

In reality I will probably just browse all of the ingredients and make up my own recipe for a veggie burger but I still like the inspiration.
I needed to do a major Trader Joe’s grocery shop yesterday not just because I had my own extensive list but because my son complained that we had no food in the house.
The usual stuff including some extra snacks:
- Mini Mint Ice Cream Mouthfuls < – My son loves these, I do not like chocolate mint!
- Fig Bites < – Like a fig newton
- Chocolate Cat Cookies < – Always have a container in my pantry
- Chocolate Fiberful Granola Bars
- Jumbo Raisins
- Low Calorie Pink Lemonade < – because I had a dream the night before that I bought it so I just had to 🙂
- Mini Dark & Milk Chocolate Bars
Our weeknight meal planning recently got easier because my son decided he is now obsessed with taco bowls for dinner which I make with either ground turkey or shredded chicken. I feel like everyone makes this dish already but if you want me to share my basic recipe in a later post, please let me know and I will!
I rarely make Mexican-flavored vegetarian meals for myself, did you know that? I just don’t crave it. I know, I am weird.
Now that he requests his taco bowls for dinner a few nights a week, I am not stressing his end of the meal planning which is my most stressful end. Me? I am good with a power bowl so in combination with that and maybe making a veggie burger, dinner is loosely set for the week.
I do like the looks of a lot of the recipes I saw this week, especially the vegan sloppy joe’s below. I can definitely see myself making those as they fit my requirements – meatless, limited amount of ingredients and really easy!

3 things you are doing this weekend?
I definitely do crave mexican and taco salads/bowls! Just made a breakfast one to share next week 🙂 This weekend, let’s see, running 10 miles and panicking that there’s only a week left until Boston? Probably stalking the weather? GULP!
I will start praying for good weather for you! Hopefully this week’s weather got all of the crazy wind, rain and cold out of the air. It’s been so icky this week! I saw the Mexican recipe you are going to share – I immediate thought my son would love that, I meant to say it in your comments but forgot!
We don’t buy alot of snacks at trader joes but sometimes Rob will get chips and salsa, and I really like the PB pretzels (but I ate too many last time and got a stomach ache) and over the holidays we really liked the white chocolate peppermint pretzels.
I have never made my own veggie burger, and always get nervous to get one out because I am not sure if it will be good. I’ve never heard of Zinburger but I will have to see if we have one around here!
I don’t love buying the snacks but I need them for my son and his friends. I have to appear like I pack the house with goodies lol…I remember when you ate those pretzels and tried to run after!
This reminds me that I need to make some fritters (the veggie burger thing). Zin burger came to Cville right after I left it, but I”ve heard good things. And how dare your son??
I am not a great judge since I don’t eat meat but people really like zinburger. its been open a few years, it’s a nice atmosphere and good for watching games….and their chocolate cream pie is actually fabulous
So for the people that are not health nuts lol the shakes at zinburgers are sooooo good in addition to the sweet potato fries! I need to go to trader joes alone bec/ when I go with the kids I can’t really look at all the fun snacks you get!

Favorite TJ’s snacks: Turkey jerky, crunchy cookie butter, chocolate covered pretzel slims, and all the red wine because I love their wine!
Three things I’m doing this weekend: Dinner with friends tonight at an Italian restaurant I’ve been wanting to try … Chi Town Half Marathon in the AM … Relaxing/refueling/shopping!!

Yum to that burger! It looks so good! There’s a chain near me called Burgatory that has the BEST burgers ever. They have lots of different meats and even veggie..all so good. This weekend I’m painting the living room, running, and freezing in the snow! Boo!
TJ’s has the best snacks ever–I love their chocolate pb filled pretzel nuggets, sugar/sea salt dark chocolate almonds, white cheddar puffs, and gingersnaps!
I’ve made How Sweet Eat’s black bean burger a few times with pretty good results! I tried making one once with mushrooms, brown rice, and cashews – it was good but crumbly so not quitr burger-ish. That veggie burger looks so good!!
I remember that you shared recipe for meatless meatballs and it was great! I made big batch of that. So I can`t wait for new meatless recipe from you 😉

I don’t eat enough veggie burgers! Costco has really good ones in their refridgerated section but I haven’t bought them in awhile!
I want to make my own veggie burgers but never know where to begin. I’ve been throwing around a quinoa, spinach or kale, and feta idea for awhile…
I love a veggie burger every now and again, though I’ve never actually made one myself from scratch. I’m more of a burger builder and eater! I must have a go at a recipe one of these days!
