Sick Days And Waffle Ice Cream Sundaes

 

The only thing worse than having a food allergy rash reaction thing for days which prevents you from sleeping is when your son wakes up super early on the Monday morning of a camp day throwing up.

Thankfully he wasn’t sick since he felt fine afterwards but it was enough to keep him home from camp yesterday… And enough to keep a tired me from resting or accomplishing any type of work at all.

In those early morning moments yesterday where it was only 9:00 am yet it felt like 4:00 pm, I thought back to my post about running and motherhood and my belief that the strength I had when my son was a baby/toddler far surpasses my running speed and endurance now.

Little in life is more challenging or more of a test of patience than raising children, putting their needs first and keeping up with them on a good day, let alone a day when you are tired and not feeling yourself.

I don’t know how I did it back then when I had mastitis while still nursing and he was nine months old, when I had a stomach virus and he was a toddler, when I suddenly found myself living the life of a single mother and he was sick every other week catching the school germs and passing them to me simultaneously…

Since we were up bright and early and he was feeling fine and hungry, we left the house in search of more coffee for me and a cinnamon crunch type bagel for him.

I sort of feel bad living in New York and getting my son a Panera bagel but I thought I needed the opportunity for free refills on their Hazelnut coffee. Lately however, Panera’s coffee just doesn’t taste as good as it used to. Anyone else feeling this way?

We then proceeded to walk the mall that wasn’t even opened yet which had me recalling the moments of his childhood where I used to walk bright and early through the same mall with him, only he would be smushed into his stroller and I would be wishing I never had to send my baby to school because I didn’t want to imagine my days without my favorite little sidekick.

I spent the entire day yesterday reminding myself to treasure these moments together because one day I will miss having him nag me, constantly telling him he is hungry, needs a new pair of sneakers, is it time for a snack, what can we do now, what are you doing now and can I do it with you.

We only did window shopping but between me and you, I think I will go back for this shirt when I am alone because had I bought it yesterday, my son would have expected something for himself as well.

I just love the color pattern of my old fave Gel Nimbus sneakers but I won’t look back. Way too heavy of a shoe compared to the Adidas Energy Boost. And not as comfy.

I certainly didn’t have the time to develop the post I had planned for this morning but I did have time to test out a really fun recipe.

You know how I love ordering waffle cone bowls at Cold Stone Creamery, right?

Well, I came across a really simply (and clean) recipe from The Gracious Pantry for making waffle cones at home and yesterday was the perfect opportunity to attempt it.

I picked up this fun container of Breyer’s Blasts Birthday Blast ice cream because it looked like a good time.

Okay, as my son pointed out, they technically refer to it as a “frozen dairy dessert” but come on – it’s cake batter flavored with birthday cake chunks and sprinkles which screams a cool mom picked it out of the freezer aisle and ignored the ingredients list.

I followed the waffle cone recipe almost exactly except I used regular sugar in place of coconut sugar.

It’s a super short ingredients list consisting of whole wheat flour, coconut oil, sugar, egg and salt which balances out the bazillion ingredients in the “ice cream”.

We only ran into one problem.

I didn’t have a waffle cone iron. I used my usual Belgian waffle maker thinking somehow I would get this recipe to work and be able to roll the waffle up into a cone.

No such luck but the waffles themselves are simply delicious, definitely have a distinct waffle cone flavor and make for terrific waffle ice cream sundaes.

We have a couple of waffles left over which my son has already claimed for this morning only I will top it with yogurt and berries in place of ice cream for breakfast.

I know, a cool mom would give waffle ice cream sundaes for breakfast. I guess I am not as cool as I thought.

  1. Aww bummer about the stomach bug. Glad your son bounced back quickly, though! And those waffle sundaes look bomb. I’m more of a sugar cone girl myself, but I would not turn down a waffle typed with ice cream. Reminds me of Leslie Knope.

  2. First of all, I love the hazelnut coffee from Panera! (I haven’t noticed a difference… but I haven’t been there in awhile.)

    Secondly, I’m totally throwing myself an ice cream party for my birthday this week, and you better believe I’m going to need some sort of birthday cake ice cream.

  3. Sounds like everyone is experiencing the pains of perspective right now. I’m sorry that your son and you were both feeling less than stellar, but I’m glad that you all spent some real time together. Hopefully, everything will be getting back to normal soon though!
    I definitely prefer Panera/Einsteins coffee over Starbucks/DD/McDonalds. The best coffee, however, is at WaWa, a gas station/rest stop. SO GOOD

  4. I love that shirt! I always ask my mom when I’m sick how she did it with four kids. She always says, I don’t think I ever got sick. It was like i knew I couldn’t. This pregnancy has been so hard on me the first four months. I felt like a terrible mother because I wanted to go to sleep at 5 every night because of my headaches. I truly believe mom’s are super strong. we have to do a lot!

  5. No cones is simply a sin — people who eat ice cream out of bowls are totally missing the point. I’m a big fan of waffle cones, but I won’t say no to a sugar cone either. And when it comes to coffee, I always find myself going back to Starbucks. Granted, we don’t have Dunkin or Panera up here in Canada, but I do love my Bux 😀

    Actually nearly spat water on my screen. That is the single best line ever. And your reasoning is spot on. I loved Starbucks at the start for the cup (lol) then realised the carts were damn cheaper and just as good. And don’t start me on waffle cones…
